Creamy Carrot Soup
Enjoy the vibrant orange color and sweetness of fresh carrots, combined with the fragrant aroma of saffron and garlic. Healthy and tasty, this delicious soup makes an ideal appetizer or starter for any meal. All organic vegetables were used in this recipe and may be purchased at Choices Natural Market, our local health food store on the Island of Venice.
Ingredients:
4 large unpeeled carrots, cleaned and chopped
1/4 tsp. olive oil
2 celery stalks with leaves, chopped
1 large onion, peeled and chopped
Pinch of saffron
Salt and pepper to taste
2 cloves garlic, peeled and minced
1 cup soy or skim milk at room temperature
Parsley
Directions:
Steam the carrots 4-6 minutes, as steaming helps to preserve the beautiful bright color of the carrot.
In large skillet, add the olive oil, celery, onions, saffron, salt and pepper, and cook until vegetables are soft.
Add garlic and cook for one minute.
Transfer the vegetables from skillet to a food processor or blender. Add carrots and milk, then process until smooth.
Pour the mixture back into the skillet and heat if needed.
Serve in bowls topped with parsley.
Tropical Carrot, Mango & Broccoli Salad

Ingredients:
1 mango, peeled and chopped
1/4 head of iceberg lettuce, chopped
1 lb. or one bundle of broccoli, cut into florets
2 Tbsp. finely chopped coriander or parsley
3 large carrots, peeled and shredded
1 tsp. grated lime zest
2 Tbsp. lime juice
2 Tbsp. honey
Salt and pepper to taste
1/4 cup olive oil
Directions:
Place mango, lettuce and broccoli in large bowl. Toss in coriander or parsley, and carrots.
In a small bowl, whisk together lime zest, lime juice, honey, salt and pepper.
Slowly add the olive oil, in small increments, whisking vigorously until emulsified.
Pour dressing over vegetable mixture and toss gently. Serve and enjoy!
