Ingredients
1 cup
pomegranate seeds
1/2 cup raisins
1 lb cooked chicken breast, cubed
1/2 cup pine nuts, toasted
1 cup apple, preferably red, chopped
1/2 cup celery, sliced
2 Tbsp basil, chopped
3 stalks of green onion, chopped
1/4 cup olive oil
2 Tbsp mayonnaise
3 Tbsp red wine vinegar
1/2 tsp curry
Salt and pepper to taste

Directions
Cut pomegranate in half, place in a bowl of
water and extract the seeds.
Drain seeds.
Combine most seeds, raisins, chicken, pine nuts,
apple, celery, basil and green onion in a bowl.
In a separate bowl, whisk together olive oil,
curry,
mayonnaise, red wine vinegar, salt & pepper.
Pour over chicken salad mixture and
toss.
Serve over a bed of greens.
Garnish with
more pomegranate seeds and apple slices.
