1 cup yellow cornmeal
1/4 cup white flour
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper |

4 multi-grain rolls
4 four ounce grouper fillets
2 Tbsp olive oil
1 small red onion, sliced
Mixed greens |
Prepare the tartar sauce by combining the first
5 ingredients in food processor or blender.
Blend until smooth.
Combine next 5 ingredients and dredge fish in
the cornmeal mixture.
Fry fish in oil on medium-high heat about 4
minutes on each side until firm
to touch. Place
fish on roll and top with onions, greens and
tartar sauce.
Recipe makes 4 sandwiches.
